Sunday at Home

Happy Sunday! I slept in this morning, which is a rare treat. I was in the “comfy spot” in bed (you know exactly what I mean!), which made it impossible to get up. I finally got up around 9:00 and made some coffee before taking Bella for a 20 minute walk. Bella’s 12 years old so 20 minutes is about all she can handle, unfortunately. She’s a little old lady, but she loooves her walks!


Once we got back I decided to make a breakfast casserole. I love breakfast casserole because it’s super easy and you can use ingredients you have on hand. I usually throw in whatever veggies I have on hand and switch up the meats too. My favorite is turkey sausage, but you can use any kind you like. You can make breakfast casserole really healthy if you go heavy on veggies, light meats and sub in healthier stuff like egg whites. That goes the other way too, so just make sure you don’t pile on the cheese! Here’s what I put in today’s casserole:

Casserole ingredients

  • 1 container of reduced fat crescent rolls
  • 4 eggs
  • 2 separated egg whites
  • 1 onion, sauteed
  • 1 tomato, diced
  • 1/4 cup fat-free feta cheese
  • 1-2 cups raw spinach
  • 1 package of fully cooked chicken sausage
  • 1 cup shredded mozzarella cheese. I try to use reduced fat, but only had regular this time

Lay the crescent roll dough in a casserole dish (9×13 works). Saute the onion with a little butter or olive oil until translucent. Then add the chicken sausage, tomato, and spinach. Meanwhile, beat the eggs well with a fork and season with salt, pepper, and any other seasonings you like. I like to add a little cayenne for some kick. Add about 1/4 cup almond milk  and the feta cheese to the eggs.

Once the chicken sausage mixture is heated up and the spinach has started to wilt, pour into the casserole dish on top of the crescent dough. Then pour the egg mixture over the top and make sure it gets distributed. Finally, top with the mozzarella cheese

Pop into a preheated 375 degree oven for about 45 minutes or until the eggs are set and the cheese is nicely browned on top. Enjoy!


Riley got to it before I could take a picture of the whole thing. It was delish! The rest of the day will be spent cleaning, washing the car, and maybe another walk. Hope you make the most of your Sunday!
