Summer Vegetables

Well, hello Monday…. Today was a whirl-wind of activity as I got ready to head out of town tomorrow for work. Good thing I was nice and rested from my 4-day weekend!

The rest of my weekend was very low-key. We went to Riley’s dad’s house and my parents came down to meet us. We enjoyed some drinks on the back deck and lots of food!

There were too many options for me to try them all, so I had some beer-can chicken, pork, pasta salad, and cucumber salad. If you’ve never had beer-can chicken, you are missing out, my friend. It’s so good!

After dinner, we took a stroll down to the water. My father in-law lives on a reservoir and has some gorgeous views from the back yard!

It was great to see my parents and also just relax outside! Before we left, we got some fresh veggies from the garden. There were tons of tomatoes, zucchini, yellow squash, cucumbers, and peppers. We have an awesome stash right now!

The picture above is just a sampling of how much we got, so now I’m facing a dilemma: what do I do with it all?? My plan for tonight’s dinner is to make some tortellini with chicken and chop of some of the veggies to toss it all with olive oil and feta cheese.

  1. Looks like such a great weekend. For me it depends what veggies they are but I’ve made Ratatouille before as well as veggie based casseroles, I also like to roast up veggies for the week or make a big pot of vegetable soup and freeze it 🙂

  2. looks like a fantastic weekend and all that food looks DELICIOUS. last night i had some leftover mushrooms and asparagus from over the weekend, and i did almost exactly what you’re thinking of doing- i sauteed them in garlic and then tossed them into some spaghetti with olive oil, parm, capers and red pepper flakes for a kick 🙂
