Man, yesterday was brutal…I felt like I didn’t stop all day and while I can’t say it was a bad day (I really do love my job!), by the time I drove the 45 minutes home I was ready to do exactly what I said I wouldn’t do the rest of this week: drink wine and eat junk food. Enter Digiorno pizza and Pinot Grigio out of a box. <sigh>. I was so healthy up to that point, with my awesome workout and protein smoothie. I was the perfect little model health blogger. Until I sent Riley to the store for pizza and alcohol, that is.
Everywhere I go in blogging land, I see people talk about the 80/20 rule: be healthy 80% of the time and indulge 20% of the time. “Yay for kale and flax seed!” Well, last night was part of my 20%…. In my defense, I did throw in a pitiful little spinach side salad to ease the guilt.

Healthy Day: Take 2
Since I’m such an optimist, I’m starting today with a new frame of mind. I get a do-over! Despite the soothing sound of rain when I woke up, I started off my day with an early trip to the gym that included 35 minutes of HIIT running on the treadmill. The sprints at the end were awesome! My favorite song of today’s workout was definitely Power by Kanye West.
I hadn’t had a breakfast sandwich in a while so I decided to make one this morning. We have some maple bacon in the fridge that’s been calling to me and lemme tell you, maple bacon smells better than any other kind! I LOVE breakfast sandwiches, but unless you make them yourself they can get pretty bad for you. Here’s what I use:
- 1 whole grain sandwich thin
- 1 egg
- 1 thin slice sharp cheddar (like the Sargento super thin slices)
- 1 slice bacon
- Small handful of spinach leaves
- Spicy mustard
Made like this, the sandwich only has 260 calories! I rounded out my breakfast with some strawberry Greek yogurt and iced tea. Super yummy!
Since I plan on keeping up the 80% healthy rule all day today, I’m already thinking ahead to dinner. I ditched chicken breasts in favor of pizza last night, so now I have some chicken in the fridge that needs to get used. I’m thinking of cooking the chicken Mediterranean style along with some quinoa. Here’s my inspiration for tonight’s dinner:
