Black Bean and Avocado Salad

Good morning! This past weekend I made a really yummy salad to go with our dinner and I thought I’d share the recipe with you.

This is a pretty basic dish so I’m sure you’ve seen similar recipes. The best part about this is that you can’t mess it up. It’s so easy and if you forget one ingredient or substitute something else, it’ll still taste good. So here goes:

Black Bean and Avocado Salad

Time: 10 minutes

  • 1 avocado, chopped
  • 2 roma tomatoes, chopped
  • 1 can black beans, drained and rinsed
  • 1 can yellow corn, drained
  • 1/2 cup diced red onion
  • 1/4 cup finely chopped cilantro
  • 1 jalapeno, diced
  • Juice from 1-2 limes
  • salt and pepper, to taste

Chopped up all your veggies and put in a large bowl. Season with the salt & pepper and squeeze the lime juice over the top. Toss salad and serve immediately, or cover and let it sit in the fridge to let the flavors blend together.

So tasty! You can make this as a side dish or even treat it as a dip with some tortilla chips.

Last night, I used the rest of the leftovers as a burrito filling with some chopped chicken breast and brown rice.

I put the filling in a whole wheat tortilla and had an awesome dinner!

That’s all I have time for today! I’ve got a full day packed with meetings and preparations for my trip to Charlotte next week.
